Loaded Potato Bites

Ingredients

  • 2# Fingerling or small redskin potatoes
  • ½ cup sour cream
  • 5 strips of bacon, cooked crisp and crumbled
  • 1-Tablespoon Awesome Antler Rub

Instructions

  1. Scrub potatoes well.
  2. Rub butter on skins.
  3. Bake at 375 degrees until fork tender –about 30 minutes.
  4. Let cool to handle.
  5. Cut potatoes into 1” rounds, cut off ends so the rounds can sit upright.
  6. Scoop a little potato out of the tops.
  7. Shake on Antler rub.
  8. Combine sour cream with Awesome Antler Rub and spoon onto the tops of the potatoes.
  9. Top with bacon bits.
